I love making breakfast that satisfies not only my kids, but also my husband. I find if I take the time to make a healthy, filling breakfast for the whole family, we all have a better day. It improves energy levels and ability to concentrate in the short term for everyone, not just the kids.

These pancakes can be whipped up in just a few minutes using whole grain einkorn flour. They are easy to make with basic pantry staples. I love using whole-grain Einkorn flour for this recipe because of its slightly nutty flavor.

What’s so special about Einkorn Flour?

Einkorn is an ancient grain, and it is believed to be the oldest variety of wheat along with Emmer wheat. It is one of the only unhybridized wheat that we have left.Einkorn wheat is high in protein and has a lower gluten content than modern wheat, making it easier to digest for those that are sensitive to gluten. It is also great for muffins, brownies and cookies, not so great for bread. Bread needs wheat with a higher gluten content to get that beautiful rise.

Are Einkorn Pancakes healthy?

Yes! They are much healthier than traditional pancakes made with white flour. Einkorn has a low glycemic load which means it wont spike your blood sugar level. It contains 3 to 4 times more beta-carotene than regular wheat. Beta carotene is an antioxidant which protects the body from free radicals. This pancake recipe also has blended flax and oatmeal flour in it making it more hearty than a regular pancake recipe.

Helpful Tip

I always blend flax with a hand blender and store it in the freezer. Perfect if you like adding extra fiber to your daily diet. Same with oatmeal. You can also use your Vitamix or blender and quickly grind some oatmeal to have on hand. I usually fill a big mason jar and keep it in the pantry.

Do I need a grain mill to get fresh Einkorn Flour?

I use my Komo Grain Mill to mill einkorn berries for fresh milled flour. If you don’t have a grain mill, you can buy fresh milled all purpose einkorn flour. I have found that some people prefer to substitute half with all purpose white flour to get more fluffy pancakes.You can buy fresh milled Organic Whole Grain Einkorn Flour online if you don’t have a local mill nearby.

Can I make dairy-free Einkorn pancakes?

Yes. You can substitute the milk for coconut milk, almond milk or oat milk. Coconut oil can take the place of butter. Use coconut cream in place of sour cream.

Mix it up a bit!

My kids love it when I mix it up! Try adding fresh blueberries or chocolate chips.You can also make this recipe using any other whole grain flour that you have on hand.

How to make the best Einkorn Pancakes Recipe.

1. Combine the dry ingredients first. Add fresh milled einkorn flour, oatmeal flour, blended flax, baking powder, sugar, salt into a large bowl.

2. Make a well in the center of the bowl and add milk, buttermilk or sour cream, melted butter and large eggs. Use a wire whisk to combine the wet ingredients in the middle first and then add in the dry ingredients on the outer edge. Mix together until just smooth. Batter that’s a bit lumpy is better than over-mixing. Over-mixing batter makes heavy and flat pancakes. (You want the batter to be on the thicker side. If the batter is too thick add in a few tbsp of milk. If it is too thin and runny, add in a bit more flour)

3. Let the pancake batter rest while you preheat a large skillet to medium heat. Lightly grease with olive oil or butter.

4. Add 1/4 of batter per pancake to the hot griddle.

5. Cook pancakes properly before you flip them. Check the underside if you have the correct heat. If they brown too quickly, turn down the heat. Once they are ready to flip, they should be a nice even golden color on the bottom and bubbles will start to form on top of the surface. Use a good spatula to flip your pancakes and get a perfect pancake every time.

6. Serve with pure maple syrup.

Notes

If you’re feeling fancy make some whipped cream sweetened with maple syrup and cinnamon and serve with fresh strawberries on the side.

Store any leftover batter in an airtight container and serve again the next day. You can freeze leftover batter as well. Just put it into a Ziploc bag and freeze. Place in the fridge to thaw the night before and you will have pancakes ready to go the next morning!

  • 4 1/2 tsp ground whole flax
  • 4 1/2 tsp baking powder
  • 1/4 cup cane sugar
  • 1 1/2 tsp salt

  • 1 3/4 cups milk
  • 3/4 cup sour cream or buttermilk
  • 1/2 cup melted butter or oil of choice
  • 2 eggs
