Ingredients and Substitutions

See printable recipe card for complete ingredients and instructions.

  • Sugar –Classic, granulated white sugar.
  • Flour – All-purpose works well here, and I prefer bleached flour for a little finer grain.
  • Baking Powder –All baked goods need a leavening agent.
  • Salt – Adding a little salt to balance the sweet is essential for baking.
  • Eggs – That moist, fluffy quality we love in quick breads is thanks to quality eggs. All of my recipes call for large eggs.
  • Milk – Milk helps to retain moisture in this quick bread. You can use any type of milk- we generally have 2% in the fridge and it works well!
  • Vegetable Oil – I prefer a basic vegetable oil for my quick breads so as not to alter the flavor.
  • Cinnamon – Don’t skimp on ground cinnamon in this recipe.
  • Diced Apple –Any apples will do, but Jonagold, Honey Crisp, Braeburn, and Pink Lady are all great for baking. You can grate the apples too, if you prefer!

  • Add a Topping – Simply combine cinnamon, brown sugar, flour and butter until crumbly and add just before baking.

FAQs

Why does my apple bread fall apart? ›

Too much moisture is the most likely reason your apple bread is falling apart. If the apples are producing too much moisture, you will have to compensate by reducing the milk in the recipe by 1-2 tablespoons. One of the other reasons is not baking the bread as soon as the batter is ready.

Why is my apple bread so dense? ›

There are a few reasons why your apple bread might be dense. One reason could be that you overmixed the batter. Be careful not to overmix, or your bread will be tough. Another reason could be that you didn't let the bread cool completely before slicing into it.

What is the quick bread method? ›

Quick breads are prepared by the blending-, creaming-, or biscuit-method which determines the final texture and crumb of the finished product. The blending-method, also known as the muffin-method, combines the wet ingredients in one bowl and dry ingredients in a second bowl before mixing together.

What is one thing that makes quick breads special? ›

Quick breads use the chemical leavening agents of baking powder and/or baking soda. Baking powder and baking soda do not require time for rising, so the batter for quick bread is cooked immediately after mixing. The best thing about quick breads is that the options are limitless when it comes to ingredients.

How to keep homemade bread from falling apart? ›

The longer dough rises, the more active the yeast becomes. If it goes too far, the gluten relaxes too much, and the bread will collapse or go flat while it bakes. By restricting it, you produce better bread with a more reliable crumb. Poke your finger into the dough to check if it has sufficiently risen.

How can I make my bread fluffier instead of dense? ›

Potato Flakes or Potato Water

Starch helps the dough by trapping the gas from the yeast in the dough and makes the bubbles stronger. This helps the bread to rise and be lighter and fluffier. If you are boiling potatoes, you can use the unsalted water in place of the water in your bread recipe to help out the yeast.

What is the best flour for bread? ›

While bread flour is the best option, it can sometimes be used if you don't have bread flour. “Check the protein content,” advises Chef Jürgen, since it can vary from brand to brand, and an all-purpose flour that contains protein on the higher end of the range, 12 to 13 percent, will produce a better outcome.

What ingredient makes bread heavy? ›

Strong flour has more protein and gluten and gives an overall heavier feel to the bread, both in weight and texture/taste. If you are already using strong flour consider using less yeast, this will cause the bread to rise less and be heavier, but this may make the taste and texture less pleasant.

What are the 7 basic ingredients in quick bread? ›

The basic ingredients in muffins are flour, leavening agent, eggs, oil, sugar, salt, and a liquid. Flour blends may be used to increase the nutritional value of the product. Muffins are made from a drop batter. They are leavened by a leavening agent, such as baking powder.

What is the secret to success when making quick breads? ›

Tip 1: Follow the Recipe Closely. The first and most important tip to making a successful quick bread is to follow the recipe closely. Quick bread recipes are generally very precise, and even small deviations from the recipe can cause your bread to turn out differently than you intended.

What happens if you leave an egg out of bread? ›

Bread with no egg looked as normal as any other white loaf. It had puffed up evenly and had a nice crust colour and a soft texture. The interior was soft but quite tight. This could be made lighter by skipping the pre-shaping or folding steps making the dough looser.

How to make bread mix better? ›

Butter and especially stronger oils, such as walnut, can also add flavor to bread. Dry milk powder adds flavor to bread and can soften its texture, as in the case of this basic white sourdough. Add it to dough with the flour.

What is the baking soda and baking powder used for in bread? ›

Baking powder and baking soda are both leavening agents, which means they cause dough or batter to expand by releasing gas. Yeast is another leavening agent you might know about.

Why does my homemade bread fall apart so easily? ›

Too much flour and not enough water can cause crumbly bread – people often do this if the dough is too sticky and they add more flour rather than kneading through it. Other culprits can be overproving or not kneading enough – the things you need to do to get a good structure.

Why is my fruit loaf so crumbly? ›

This can happen for a variety of reasons ranging from type of flour, not enough eggs/wrong size eggs, not enough liquid or fats and even storage. 'Causes of crumbly fruit cake'.
