Storage

If you have leftover pasta place it in an airtight container in the fridge for 2-3 days. Then you can reheat the leftovers in the microwave in a microwave-safe dish, or on the stovetop. Add more broth or milk to the mixture as it will thicken once chilled. I recommend to heat up on low heat so you don’t burn the mixture.

You can also freeze the pasta if you would like, for 1-2 months. Then when you are ready to eat, thaw in the fridge overnight, or reheat straight from the freezer. The pasta will be a bit softer once it is reheated.

  • Cook the pasta as directed on the back of the package. Follow the package instructions for cooking the pasta. The cooking time can vary a bit depending on how fast your stove heats up.
  • Trim the boneless chicken and remove any fat or areas of the chicken that need to be trimmed up. Do this before you place it in the slow cooker.
  • If you use the Buffalo Wild Wings sauce over making homemade sauce, then add 1/2 to a whole bottle depending on how rich you want the recipe to be. I prefer the homemade version in terms of flavor.
  • You can use shredded chicken that is precooked if you want. You would just cook for a less amount of time as you mostly just want the flavors to blend essentially.
  • Feel free to use gluten-free pasta or protein pasta for this slow cooker recipe. Just essentially cook the pasta of your choice as you would prefer.

You can use bone-in chicken, but you will need to remove the chicken and then debone the chicken before serving. I find that boneless works best for this recipe.

Ingredients

  • 2 pounds boneless skinless chicken breasts
  • 1 cup grated Parmesan cheese
  • ½ cup chicken broth
  • ¼ cup melted butter
  • 4 cloves garlic minced
  • 1 teaspoon dried parsley
  • ½ teaspoon dried oregano
  • ½ teaspoon dried basil
  • ½ teaspoon black pepper
  • ¼ teaspoon salt
  • ¼ teaspoon red pepper flakes optional
  • 2 cups penne pasta cooked according to package directions
  • Additional grated parmesan for serving

Instructions

  • Grease the crock pot with cooking spray or butter to prevent sticking.

  • Place the boneless, skinless chicken breasts in the bottom of the crock pot.

  • Over the chicken, place the grated Parmesan cheese, chicken broth, melted butter, minced garlic, dried parsley, dried oregano, dried basil, black pepper, salt, and red pepper flakes (if using) over the chicken.

  • Cover the crock pot with the lid and cook on low heat for 4 to 6 hours, or until the chicken is cooked through and tender. Cooking times may vary depending on your crock pot, so check for doneness at around 4 hours.

  • Once the chicken is fully cooked, use two forks to shred the chicken directly in the crock pot or dice if preferred, mixing the chicken well with the flavorful sauce.

  • Toss the pasta into the chicken and sauce. Allow the pasta to soak up the sauce for an additional 15-20 minutes on the “warm” setting if available, stirring occasionally to ensure it’s evenly coated.

  • Serve garnished with additional grated Parmesan cheese.
